Christmas Crunch Salad- Perfect with leftovers
I love this salad because you really can add any protein to it. It’s so quick and easy to make, and I’ve named it Christmas Crunch because of all the crunchy elements in it, and you can add all your leftover Christmas proteins to it to bulk it up. For the raspberry vinegar I love to use Josh and Sues raspberry vinegar as it has such a fresh and fruity raspberry taste.
Ingredients
2 handfuls rocket
1 tbsp. pine nuts, dry roasted in a pan for 30 seconds to 1 minute
1 tbsp. French or baby capers
1 tbsp. marinated Persian feta
1 tbsp. crispy fried shallots
For the dressing
¼ tsps. seeded mustard
½ tsp. crème fraiche
1 tbsp. olive oil
1 tsps. raspberry vinegar
Method
Place the rocket in the bottom of a bowl, and garnish with the cooled pine nuts, capers and fried shallots. Crumble the feta over the top of the salad.
To make the dressing combine the dressing ingredients in a bowl and drizzle over the salad
To bulk up the salad add your favourite left over Christmas protein. I love to add shredded smoked chicken breast to this salad because its so quick and a good source of protein with no fuss. But shredded turkey, ham or even salmon would go so well with this salad.
