Watermelon Margarita
The recipe you've all been waiting for, thank you for being patient. And to all of you who have been messaging me on Instagram for this recipe, here it is!
These margaritas are perfect for any occasion. I recently made these for my paella fiesta and they are so light and refreshing, and they went down a treat. I love using Espolon tequila in all my tequila cocktails and drinks. I used the blanco (white) tequila from Espolon, which is perfect for cocktails. For this recipe I’m not putting exact measurements, just ratios, I also find this cocktail is one you need to test yourself to see what strength of tequila you like. Once you’ve prepared all your ingredients its just a matter of giving them a shake together, testing a little and adding more or less depending on your taste.
You’ll need
Fresh watermelon juice, approx. ¼ - ½ watermelon
Fresh lime juice, approx. 4 limes
Espolon blanco tequila
Sea salt flakes
To begin with get a melon baller and ball the flat sides of the watermelon. I like to prepare 2 melon balls per glass. Once you’ve balled enough melon balls, stick 2 of the melon balls onto a toothpick and set aside.
Now to prepare the glass, rub some lime juice around the edges of the glass and dip it into the salt flakes. Give the glass a little twist in the salt so the whole rim is coated.
For the watermelon juice cut up the remaining watermelon and place it into a blender. I like to use my Vitamix as it is so high powered, and gets the job done so quickly. Blend the watermelon for about 30 seconds on high speed or until it becomes liquid. Now pour the juice through a sieve, catching the froth and any solid bits from the juice. I like to pass the juice through the sieve about 4 times, just to make sure the froth is completely gone, as it tends to separate from the juice.
Cut the limes in half and juice the limes, then set the juice aside with the watermelon juice.
Now that the juices are all ready, it is now time to put the margarita together. When making the margarita I like to follow this ratio
1 part tequila
1 part lime juice
2 parts watermelon juice
You can do these in shot measurements if you like when starting out. In Australia the equivalent to one shot of spirits is 30ml. So for example start with 30ml tequila, 30ml lime juice and 60ml watermelon juice. Place these ingredients into a cocktail shaker filled with ice and shake quickly to combine. Try a little bit of the mixture to see if the taste is accurate, if the tequila is too strong for you add more of the juices. If the mix is too sour add watermelon juice. And if the mix is too sweet add more lime juice.
To serve fill the salted glasses with ice and strain the margarita mix into the glass. Top the glasses off with the watermelon picks and enjoy.
You can prepare this mixture in bulk as well if you like. I made up a whole jug for my paella fiesta and kept refilling glasses with the mix and topping with ice.
