I am obsessed with these cookies recently! Such a good recipe of mine and I've been baking these for years now. It is a very special recipe to me, passed on from my godmother Sammy. I usually make these with just chocolate chips, but decided to spice them up a little.
I love baking simple things when I'm home, especially coming into winter these are such a good treat to have with a tea or coffee, or just an afternoon snack.
I always use good quality chocolate as well as good quality ingredients when I'm cooking and baking especially. In this recipe I have used Koko Black chocolate from their At Home range.

Choc Chip & Speculaas Spice Cookies
Ingredients
250g butter unsalted, room temperature
160g brown sugar
160g caster sugar
1tsp vanilla bean paste
1 tsp speculaas spice
½ tsp cinnamon
2 eggs
330g self-raising flour
150g white chocolate chips
150g dark chocolate chips
Method
- Pre heat an oven to 170 degrees Celsius, line 3 baking trays with baking paper
- In a stand mixer, cream butter and sugar until light and fluffy
- Scrape down the sides and mix in the vanilla and spice mix, beat again for another few mins
- Scrape down the sides and add the eggs in until fully incorporated
- Add in the flour and stir on a very low speed until the mixture just comes together
- Stir in the chocolate chips, and stir the mixture to ensure its fully combined
- Place spoonful’s of the mixture onto the baking tray, ensuring you leave space between them, as they tend to spread a lot
- Bake in the oven for 6-10 minutes until just golden on the edges, repeat this process with the remaining mixture
- Enjoy warm from the oven or at room temperature
